OUR GELATO!

All the entertainment is good and well but first and foremost we make fantastic gelato!

All of our gelato, all of it, is made IN HOUSE!  But just because a gelato shop says they make  gelato or "homemade ice cream" doesn't mean it's real, artisan Italian gelato...

We NEVER USE MIXES OR POWDERED BASES. All of our gelato is made with the freshest ingredients. Locally sourced and, in some cases, seasonal so when the flavor is available it is the best, freshest gelato you have ever eaten. (There are only a handful of us making gelato this way as large "gelato" supply companies have convinced the average shop owner that anyone can make gelato using their powdered base. It just isn't any good.)

Mr. J is an ITALIAN TRAINED GELATO MAKER who makes all gelato to the exacting standards that real Italian gelato demands. Trained in the art of gelato making from generational Italian gelato makers, not from a book or a crash course with a machine manufacturer, Mr. J balances the sugars, milk solids and ingredients to achieve a specific density and spreadability that needs to exist for it to be true gelato. 

We only use ALL NATURAL INGREDIENTS, with no artificial flavorings, no artificial or chemical coloring and with the best stuff we can find. (Exception being some mix-ins. After all, Peeps don't exactly grow on trees. But these are rare exceptions.)

For our VEGAN friends we take great pains to make sure all of our ingredients are 100% vegan right down to sourcing sugar that is not processed using animal products. Our OAT MILK gelato base is proprietary and took three years to perfect and balance to meet the standards of the same desirable texture and mouth feel of dairy gelato.

But most importantly, we make INTERESTING and CREATIVE FLAVORS that mark the creativity desired by customers of the best gelatarias around the world. 

This is how we can say we, at least try to, make the GREATEST GELATO ON EARTH!
Well, at least the best in Chicago.
